We have been visiting the CODECH cooperative each spring for years. The soaring altitude and coffee varietals have always promised quality, and the coffee we’ve purchased has always been very solid, providing a foundation for a few of our certified organic blends in the late summer and fall. But the last few years have resulted in what have been exceptional quality microlots, including this one from Viviano Ramirez Mendoza.

His farm sits in one of the highest coffee growing areas in Conception Huista, and his varietal composition includes red and green pache–a dwarf Typica mutation that can produce interesting nuance in flavor. This is the third year we have purchased most of Don Viviano’s crop, and its arrival this fall has been a treat. It embodies what we would consider to be pretty much archetypal for the cooperative and the immediate region: ripe red and blackberry-like fruit that doesn’t taste overly fermented, with a solid chocolate base, interesting tropical and green top notes, cinnamon and acidity to keep everything clean. Certified organic.
